Bred for robust flavor, these birds are a culinary treat. Heritage poultry is quite lean, and are best enjoyed slow-roasted or braised in liquid at low temperature for 1-3 hours until tender.

These large roasters are the slowest and longest growing chickens we sell, and the flavor will show it. Heritage roasters have an extra dark and ultra flavorful meat that some say is reminiscent of turkey, duck, or goose. The bigger the bird, the deeper the flavor. For best results, slow-roast at low heat or braise.
